Serves: 4 normal size ramekins
Prep time: 15 mins
Chill: 2 hours
Ingredients
🍪 M&S Extra Cream Custard Creams x2 Packs
🍮 200g M&S Vanilla Custard
🥛 200ml Lighter Whipping Cream
🥛 165g Cream Cheese
🍬 3 tsp Icing Sugar
🧈 40g Melted Butter
🌿 3 tsp Vanilla
Method
First, start by bashing up 1 packet of custard creams into crumbs, you can bash them or blend them.
Add 40g butter to the bashed up biscuits and mix well.
Next, fill your little pots with the biscuit base, patting it down evenly and as thick as you’d like your base to be and put them in the fridge.
In a bowl, whisk 200ml light whipping cream with 3 tsp icing sugar and 3 tsp vanilla until thick, in a small bowl, empty the cream cheese and loosen it with a spoon. Then add the cream cheese into the double cream mixture along with 200g custard. Whisk together until combined.
Take the cheesecake pots out of the fridge and fill each pot with the custard cheesecake mixture and level off the top, smoothing it over.
Let the cheesecake pots set in the fridge for 1-2 hours.
Finally before serving/eating, use a piping bag filled with custard or a spoon to create a swirl or pattern on top of your cheesecakes and finish by topping it with a full custard cream biscuit.
Leave to set fully for a few hours or overnight. Enjoy!
